Reviewer's Comments: Review Posted to BBQ lists - 12-16-97. Got to go to TJ Ribs
here at I-10 and Acadian Thruway (Exit 157B). Nice place, kinda upscale for a BBQ joint I
think. I ordered their St. Louis cut baby backs. Got baked bean and their
"Mojoes"... Fried tater chuncks with cajun seasoning on them. Got Dr. Pepper to
drink. Funny, the farther sout I go, the more Yankeefied they get! Only serve UN-sweetened
Ice Tea. I asked my waiter if I was in the South. I got a laugh out of him.
On to the review. The "Mojoes" were good! The Baked Beans were closer to being
onion paste. As for the Ribs... well, they were just right tenderness wise. They were
rather dry though. There were spots of moisture in the meatier parts. I wasn't too
impressed getting to pull part of the membrane off of this rack. Incidently, that was
where I found the moisture. This is also where I found a frozen then thawed and re-heated
taste. It was also spicer than I expected. I didn't mind this, but had I had my family
with me, I would have been out of about $50. This is a bad mark in my book for families...
Their table BBQ sauce is good... I picked some of the ingredients out by taste and
smell...
Chili Powder; Ketchup (Fancy Grade); Onion powder; Garlic powder; Cider Vinegar (Very
little); Sugar (Little if any, may have been whats in the ketchup); Cayenne Pepper(Enough
to cause a late but good burn); Salt
I think their rub consisted of only Black Pepper, Cayenne Pepper, and Salt...Overall, I'd
rate the place a good eat if you're in town...

Mrs. Hyster's Barbecue.
the best in New Orleans, probably best in Louisiana.
very small restaurant that offers ribs or chicken, plus sides and desert.
food is always the better every time I go. Sometimes the service is questionable because the counter person is in the kitchen getting food for another customer or cooking. no waitresses usually one counter person/ cashier. you stand around the cash register ( usually no line just the honor system) order you food and take a seat.
choice of the local police officers, and you know they love to eat well.

What a find! I am told they are also on Beale St. in Memphis.Dry rubbed and spiced twice. Ribs fall off the bone. I ate half a rack before I put sauce on them. Sauce was Memphis Style and Sides were O.K. but not the best I ever had but you gotta try the ribs
