Garry Howard's Chili Powder


2 ounces ancho chilies; dried and roasted
4 ounces red new Mexican chilies, dried and
1 ounce chile de arbol, dried and roasted,
; to add some heat
6 tablespoons cumin seeds; toasted and ground
6 tablespoons garlic, granulated, freshly purchas
4 tablespoons oregano, ground, preferably Mexican
4 tablespoons hot Hungarian paprika
