Chipotle Barbecue Sauce - 1

none

1 tablespoon olive oil
1/2 cup onion; chopped
2 tablespoons garlic; minced
1 cup ketchup
1/4 cup malt vinegar
1/4 cup golden brown sugar
1/4 cup coffee; strong brewed
3 tablespoons beer; stout (like Guinness
2 tablespoons molasses; unsulphured (light)
2 tablespoons tomato paste
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
1 1/4 teaspoons canned chipotle chilies; minced
1/4 teaspoon black pepper; freshly ground

Heat oil in heavy large saucepan over medium-high heat. Add onion and garlic and sauté until tender, about 5 minutes. Add all remaining ingredients. Cover and simmer until slightly thickened, stirring occasionally, about 25 minutes. Season with salt. Can be made 1 week ahead. Cover and refrigerate or can for longer storage. - - - - - - - - - - - - - - - - - -
