White Chicken Chili


1 pound raw chicken white meat cut into chu; nks
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped red bell pepper
2 jalapenos, cored, deseeded and chop; ped
2 tbsp oil
2 tbsp flour
1/4 tsp garlic salt
1 can great northern beans
2 tbsp cream cheese
1/4 cup milk
1 tbsp flour
1/4 cup of either chopped green onion, pars; ley or cilantro or a mixt
all three
grated monteray jack cheese
cooked white rice

Heat 2 tbsp oil in a soup pot, then add chopped vegetables. Cook until tender, then add the chunked raw chicken. Let cook for a few minutes stirring, then add 2 tbsp flour and stir until mixed in. Add just enough water to cover mixture. Simmer for about 30 minutes. Add 2 tbsp of cream cheese, stir until melted. Drain can of northern beans and add to the pot. If you'd like a thicker 'chili' mix up 2 tbsp flour in milk. Strain and add to the pot, stirring gently. Add green stuff and turn the heat off. To serve, put cooked rice in bowl, ladel on some chili and put some grated jack cheese on top.
