Export Format Cajun Meatloaf - 4 none 2 tablespoons butter 1/2 large onion; chopped 1/2 cup bell pepper; chopped 1 teaspoon salt 3/4 teaspoon cayenne 1/2 teaspoon thyme 1/2 teaspoon pepper 1/4 teaspoon cumin 1 pound lean beef; ground 1 egg; beaten 1/2 cup bread crumbs 1/2 cup catsup; divided 1 teaspoon Worcestershire sauce Preheat oven to 375F. Melt butter in heavy skillet over medium-low heat. Add onion, bell pepper & spices, cook, stirring frequently, for 10 minutes or until onions and bell peppers begin to soften. Combine ground beef, egg, bread crumbs, 1/4 cup of the catsup & the Worcestershire sauce. Mix well. Add sautéed onions & bell peppers. Form into a loaf. Bake for 20 minutes. Spread remaining catsup on top, bake for 40 more minutes.
