Plantains In Coconut Milk - 2c

none

4 plantains; peeled & sliced
1/4 teaspoon salt
1 teaspoon curry powder
1/2 teaspoon cinnamon
1/8 teaspoon cloves
1 1/2 cups coconut milk

Combine all ingredients except coconut milk in a heavy pot. Pour in 1 c coconut milk & simmer over a low heat until the plantain is tender & milk is absorbed. Add more milk if necessary. Serve hot.
