Chef Leanna's Porter Marinade

1/8 cup salt
1/8 cup sugar
1/2 cup yellow onion; minced
1 tablespoon dry mustard
1 tablespoon black pepper
1/3 cup garlic; minced
1 cup porter
1 cup soy sauce
1/2 cup brewed coffee
1/2 cup red wine vinegar
3/4 cup honey
1 cup olive oil
