Export Format Smoked Fish Kedgeree none 2 cups smoked fish 3 tablespoons butter or margarine 3 tablespoons flour 1 teaspoon salt few grains cayenne pepper 1 1/2 cups milk 2 cups cooked rice 2 hard cooked eggs; sliced 1/4 dried green pepper 1 tablespoon butter or margarine 1 tomato; chopped Flake fish. Make a white sauce using 3 Tbsp butter, 3 Tbsp flour,, salt, pepper and milk. Place rice, fish, eggs, green pepper and tomato in layers in a 1-1/2 quart casserole. Begin and end with a layer of rice and pour white sauce over all. Dot with 1 Tbsp butter. Bake in a moderate oven (350 degrees F.) for 20 to 30 minutes or until piping hot.
