A Mole Sauce

none

2 teaspoons salt
1/2 teaspoon pepper
1 cup water
3 large dried chilis
2 onions; chopped
Simmer for about 30 minutes

**THEN ADD**
2 cloves minced garlic
2 cups tomato sauce
1/3 cup sugar
1 teaspoon cinnamon
1 1 ounce squa unsweetened chocolate

Stir until heated through and chocolate is melted, then serve on smoked beef. Garnish with fresh cilantro. She smokes (usually uses mesquite) about six pounds of beef (flank steak, roast, whatever) with only a rub of garlic, little bit of pepper, salt, and dash of cumin... then makes a mole sauce (recipe follows), slices the beef and serves it with the sauce.
