Smoky Peach Or Apricot Baste

none

1/2 cup ripe fresh fruit, smashed with 3 tb
1/4 cup catsup
3 tablespoons lemon juice
2 tablespoons salad oil
1/2 teaspoon salt
1/8 teaspoon grated lemon peel; (zest)
1/2 teaspoon liquid smoke**

If you use peaches for this baste, try a dash of allspice to bring out the peach flavor. Try the baste first on chicken, but you may also like it on pork or lamb. Puree fruits. Combine with remaining ingredients. Simmer 10 to 15 minutes. Makes about 1 1/2 cups ** If you are using this over wood coals, the liquid smoke should not be necessary.
