Peach Salsa

none

2 cups ripe peaches, peeled and diced
1/2 cup red onion; diced
1/2 cup red bell pepper; diced
1/2 cup fresh mint; minced
3/4 teaspoon minced jalapeno or serrano chile
2 tablespoons olive oil
2 tablespoons lime juice
2 tablespoons fresh ginger root; grated

Combine all ingredients and serve. This will be even better if it can mellow for half an hour. It is particularly good with grilled or roasted chicken, beef or lamb. - - - - - - - - - - - - - - - - - -
